As a successful restaurateur, Jayden One is no stranger to hard work, running two iconic Melbourne restaurants, Cumulus inc and it’s wine bar sibling Cumulus Up. Add to that managing two vineyards n the Yarra Valley, and not only making wine for his eponymous label but has four separate lines offering a diverse perspective into the unique terrors of the Yarra Valley. The Jayden One label wines are dry-farmed using organically grown grapes from tea single vineyard sites. These include the Yarra Valley Gi’s highest altitude vineyard, ‘forest garden’ on Mount Toolebwong. This sits at nearly 100m ASL, On a south-facing slope with rocky soils. Along with organics, biological and biodynamic inputs are used and the site is tended to entirely by hand. The second vineyard is ‘chestnut hill’ on mount Burnett, directly on the south-eastern border of the Yarra Valley Gi. Sitting at 280m ASL with a north-east aspect, The song’s now hold a long-term lease for this site, which was planted in 1985 on heavy grey-clay loam soils. Both of these elevated wines contribute to the cool climate purity and elegance of the wines produced here. The other collections of Jayden Ong wines are:


One Block - These are single vineyard, single block wines with an intent to capture the essence of the vintage as it developed.

Le Maison De Ong - These focus on high altitude, premium Yarra Valley reds, Syrah and Pinot Noir. These wines are the alter egos to one blocks minimalism

Moonlight Forest - This bespoke range of unfiltered wines tell the story of its surroundings, night birds and dancing in the cool moonlight with friends as the wine flows freely.

MOONLIT FOREST PINOT GRIS ‘COY’ 2019

100% Pinot Gris 

13% ABV 

Fruit comes from Balnarring, Mornington Peninsula. Wild/Ambient yeast ferment in seasoned oak, no lees stirring, bottled unfiltered. 

Tasting note: Textural, bright and delicious. Pear and stone fruit, spice and lots of love.

MOONLIT FOREST SYRAH ‘COY’ 2016

100% Syrah 

13% ABV 

Fruit comes from Seville East, Yarra Valley. A vineyard called Syme on Yarra (Thousand Candles). Biological- ly farmed by one of the best proponents of biological farming in the Yarra Valley. Wild/Ambient yeast ferment, no new oak, unfined & unfiltered. Low SO2. 

Tasting note: Maraschino cherry and red fruits, excellent drive and structure. Seasoned oak only, vibrant and long-lasting.

MOONLIT FOREST PGXPN “SPRING” 2019

50% Pinot Gris and 50% Pinot Noir 

13% ABV 

Fruit from a grower they have worked with for nearly 10 years, in Balnarring on the Mornington Peninsula. Now successfully moving to organic farming practices. Premium quality fruit from a region synonymous with pinot. Vines planted in 2000. Unfiltered. An inspired blend here, becoming more commonplace within an oeuvre. These two varieties are of course kindred in their way. Beautiful tightly wound and pent up lighter red, stacks of fine, graphite tannin, smoky reduction a presence here, dried herbs, game meat faintly, sour cherry the big trend. It sits light and fine in the palate, racy and refreshing with the faintest sweetness of fruit and more of the smoky reduction, but feels woven in well. Elemental, earthy, ashy, laced with brambles. Very, very compelling drink- ing100% whole-cluster pinot noir destemmed pinot gris, 14 days maceration 

Tasting note: Forest floor and summer fruits, refreshing and complex at the same time.

JAYDEN ONG SAUVIGNON BLANC 2017

100% Sauvignon Blanc 

13% ABV 

Organically farmed, high altitude (260m asl), dry grown fruit by Jayden Ong. Vines planted on own roots in 1997. - No additions, unfiltered, no SO2) Three year old sauvignon blanc will be mistaken as a concept but this wine will do away with any concerns. A textural feast, lightly chalky and drizzled-on-tongue minerally, incredibly complex and fresh at the same time. 

Tasting note: Lemon curd, tight, green apple, tight, a looser flow and roll of salted peanut and creamy yeasty character bundled into the core.
