Cidres Polisson is the brainchild of Hugo Grenon, who is well-known in the world of wine and gastronomy in Quebec. 

The cider comes from Oka, Quebec, and makes use of all that nature has to offer. Hugo, who is a geologist by training, also trained as a winemaker. His knowledge of the land is very deeply reflected in how he makes both ciders and wine.

All ciders are made using local fruits using the ancestral method, without adding yeast or other additions of oenological products. No sulfur was added or used during the manufacturing or bottling stages. All the steps after bottling (disgorging, leveling, capping, and bottling) are done by hand. The ciders are all vinified in the same way in order to find the taste characteristics of each apple used.

PIKETTE

This is a delicious apple Piquette made from the blend of all the apples, and varieties of ciders that Hugo makes. Carbonic maceration minimum of two weeks. Made in the ancestral method with ambient yeast, no fining/ filtration or SO2.

Sparkling apple cider made from grape pomace, the press is then filled with crushed apples, which are then pressed and soaked together. Carbonic maceration minimum of two weeks. Made in the ancestral method with ambient yeast, no fining/ filtration or SO2.
