Grapes: Chardonnay / Pinot Noir - Merlot Dosage

Wine Making: Traditional method. Grapes are hand harvested earlier than table wines to ensure a higher acidity. Free run press only to stainless steel. Primary fermentation in tank, secondary fermentation in bottle. Triage minimum 19 months. 24-36 preferred. Riddled and disgorged at low temperature to ensure wine integrity.

Tasting Notes: Tourmaline hue, earthy aromas backed with light berry fruits and fresh baked bread. Strawberries shine with a bramble bush character and fresh citrus.

Wine Making: Cold stabilization. Organic certified Bentonite finning. No interventions. No added chemicals or alterations to the wine. Ingredients are Pinot Gris, yeast, and minimal effective sulphites.

Tasting Notes: Warm, yellow, lots of ripe fruit, good acid.

Wine Making: Cool fermentation, twice daily punch downs, carbonic maceration. Once cap sinks, Gamay is pressed off to French oak. Cool, slow malolactic fermentation.

Tasting Notes: Experience slightly chilled on the patio or bring to a picnic. Enjoy the cranberry notes with stuffed turkey and cranberry sauce.

Wine Making: Wild ferment skins in Amphora, terracotta from Italy. Pinot Gris and Schonberger whole berry, no crush, gentle punch downs. On skins for 3 months. No malolactic ferment. No additions and S02 levels below 20mg/l. No acid added, natural PH.

Tasting Notes: Resulting in natural method wine with an angelic nose and intensely complex structures. Challenge your senses, the notes are too long to list. No pairing rules.

Tasting Notes: A crisp, dry, aromatic Rosé that reflects the terroir and natural wine making approach.

Tasting Notes: Lemon gold in colour, honey dew melon aromas backed with delicate toasty bread aromas. The palate shows bright lime and tart apples, bracing acidity with very long length. Pair with island crab and buckets of melted butter.
